Probably something like the Canon 20D or Nikon D50. Affordable in the aftermarket and they enjoy tons of support.
If you have an interest in film then the Pentax K1000 and Nikon FG are affordable choices.
If you want to buy new, look at the Nikon D3000. It has a “Guide” mode that will walk you through the settings for various pictures AS YOU TAKE THEM by asking you questions about what you want as a final result. And it’s a decent camera.

Go for the 450D or D3000, if you’re interested in film then get your hands on an Olympus OM10 or something similar, possibly a medium-format camera like a Mamiya.
